In the wine world, wine and chocolate pairings are perhaps the most classic and go-to pairing option existing. And for a good reason.
But today, I have something quite unique for you.
A red wine chocolate bundt cake.
Sounds decadent? Well, it’s definitely something you won’t make every day. But the recipe is actually quite easy, and the cake will come together quickly.
You can use any red wine you like. Although I recommend using a good but not too expensive one.
And you can actually make this cake in any baking pan, if you do not have a bundt cake at home.
Recipe: Red wine chocolate bundt cake
For a bundt form of 24 cm Ø
300 g butter at room temperature
125 g sugar
100 g brown sugar
1 teaspoon vanilla extract
300 g all-purpose floor
4 teaspoons baking powder
3 tablespoons cocoa powder
2 teaspoons ground cinnamon
150 ml red wine
175 g dark chocolate, chopped
additional butter for greasing
For the red wine icing
150 g icing sugar
2 tablespoons red wine
Preheat oven to 180°C.
Grease the bundt cake form with butter and lightly dust with some flour.
In bowl of a stand mixer, whisk together butter with both sugars, vanilla extract, and a pinch of salt. Add one egg at a time and continue to whisk until combined.
Mix flour, baking powder, cocoa powder, and cinnamon. Add to the butter-egg mix together with red wine in altering additions until obtaining a smooth batter. Add the dark chocolate and combine lightly.
Pour into the prepared bundt cake form and bake for about 60 – 80 minutes until set (make a chopstick test).
Allow to cool in the pan for about half an hour.
For the icing, mix icing sugar and red wine until thick and smooth. Drizzle over the cake and let dry for about one hour.
