When in need for a quick dessert, one that will always work is rice pudding. Whether it’s because almost everybody seems to have sweet childhood memories or simply because it tastes delicious, you can be sure rice pudding is always a hit.
Rice pudding might seem to be a straightforward dish – add milk, cook until tender, then add cinnamon and fruits – yet there are many ways to add special flavours.

This ‘black’ rice pudding is a little cheat using dark chocolate to create the colour, instead of using black rice. But then, why not?

The recipe is absolutely simple, yet the dark chocolate gives it a special kick.
Recipe: Black Chocolate Rice Pudding

Serves 4
200 g rice
750 ml milk
pinch of salt
1 teaspoon ground cinnamon
200 g dark chocolate
100 ml coconut milk
4 tablespoons condensed milk
200 g fresh blackberries
Method
In a large saucepan, add milk, rice, and a pinch of salt. Bring to boil, then reduce the heat to a minimum and let simmer for about 20 minutes covered with a lid. Stir the rice occasionally.
Take from the heat and let rest for about 5 minutes, still with the lid on. Stir in the nutmeg.
In the meantime, melt the chocolate together with the coconut milk over hot steam, then add to the rice and stir in completely.
Distribute over 4 glasses. Just before serving, pour a tablespoon condensed milk over each glass and top with fresh blackberries.
