Still need a quick festive appetizer recipe to impress your guests this holiday season? Then look no further than these amazing Cranberry-Brie Pastries.
Serious question. Are appetizers the most favourite food of all?
If you ask me, they are! In fact, I could feed entirely on appetizers, and then some more.
Not only is there an almost unlimited number of these delicious little bits. Appetizers are also the most awesome food to prepare when entertaining – as most can be made ahead or quickly assembled. Which means, as a host you will have plenty of time to join in the fun with your guests, instead of spending all the time in the kitchen.
Not yet convinced?
Then think of this: Appetizers are the perfect food paired to your aperitivo.

With the holiday season in full swing, I’ve been looking for a quick festive appetizer to go along with a bottle (or two) of German bubbles.
These cranberry brie pastries are made with only few ingredients and will be assembled in minutes.

Recipe: Cranberry-Brie Pastries
Serves 12
100 g fresh cranberries (alternatively cranberry jam)
1 tablespoon sugar
3 sheets of puff pastry
200 g brie cheese
50 g bacon nuggets
few sticks of fresh thyme
Method
Add cranberries, sugar and 2 tablespoons cold water to a small saucepan. Bring to a boil over medium heat and continue until the cranberries start to pop open. Set aside to let cool.
Preheat oven to 200°C.
Grease the moulds of a mini muffin baking tin.
Cut the puff pastry in small rectangles of approximately 7×7 cm and line the moulds of the muffin tin with the pastry.
Cut the brie into small pieces and place a piece in each of the moulds. Top with few bacon nuggets, then spoon a small amount of the cranberry compote on top.
Bake for 12-15 minutes until the pastry starts to puff and takes on a lightly golden-brownish shade.
Take out of the oven and transfer them to a cooling rack. Place a small stick of fresh thyme on top of each pastry.
Serve while still warm.
